Obituary for George K. Seitis

George K.  Seitis
George K. Seitis, age 82 of the Parlin section of Sayreville passed away peacefully on Thursday, August 17th 2017 at his home surrounded by his loving family. Born in Monolithos, on the Island of Rhodes in Greece, he has resided in Parlin for the past 47 years. He had served in the Hellenic Armed Forces, was a college graduate receiving his Bachelor’s Degree in Education and he also completed 2 years of seminary college. Before his retirement he was a business owner and legendary diner chef working at various diners throughout his 60 year career and owning several landmark locations over the years such as Sir Johns in North Brunswick, The Dutchess Diner in Metuchen and The New Linden House in Linden. George was an active member of St. Demetrios Greek Orthodox Church in Perth Amboy where he passionately volunteered many hours cooking at their events and festivals.

He is predeceased by his parents Kyriakos and Anna Seitis, his brother Sakelari Seitis and his brother-in-laws Paul Psaroulis, Angelo Angelis and Antoni Pouliasis. Surviving are his devoted wife of 58 years, Theoniki Georgas Seitis, his beloved children and their spouses Kyriakos “Gary” and Ann Seitis of North Brunswick and Maryanne and John Koblos of Jackson, his precious grandchildren Jennifer, George and Matthew, his sisters Joyce Psaroulis of FL, Avgi Pouliasis of Greece and Thomaitsa Angelis of FL, his brother Michael Seitis and his wife Bonnie of Paramus, his sister-in-law Irene Seitis of Greece and many dearly loved nieces and nephews.

George always had a smile, a twinkle in his eye and a great sense of humor. He was a kind, compassionate, giving man who loved everybody and everybody loved him. He was great company and an even better storyteller. His stories would come alive when he would share with his grandchildren about his childhood growing up in the mountains of Monolithos and later in the village of Igios Isidoros, where his mother taught and he met his wife, Theoniki, as a teenager. She and her family left for America in 1952 and she returned for vacation in 1959. They reunited and got married that same year. They came back to America together in 1960 and started their life together.

George will be immeasurably missed by his friends and family.

Calling hours at the funeral home will be Monday from 4pm to 8pm with a Parastas service at 7pm.
Funeral services will be held 9am Tuesday from the Carmen F. Spezzi Funeral Home, 15 Cherry Lane, Parlin with a 10am Service at St. Demetrios Greek Orthodox Church in Perth Amboy. Burial will follow at Alpine Cemetery in Perth Amboy.
